The first thing you notice entering Fabrizio Galla’s patisserie is the long counter, with its glass case choc-a-bloc with goodies arranged with meticulous precision, the creations of one of the finest pastry chefs in Italy. Galla’s realm is situated on the provincial road that goes from Turin to the Monferrato hills. Its symbol is a cake named Jessica, named the best in the world at the Coupe du Monde de la Pâtisserie in 2007 in Lyon: seven layers filled with crisp hazelnut wafer and 72% Santo Domingo plain chocolate mousse named after Jessica Rabbit, cartoon characters being the theme of the competition. Fabrizio has come a long way since then and his shop is now a veritable boutique of Haute Pâtisserie. Here you’ll find dry pastries and petite patisserie (savarins, bonet, set chocolate and amaretti custard, panna cotta), as well as savory pastries such as leek and potato and pumpkin and speck canapés. Ever faithful to typical local produce and specialties, Fabrizio also makes an array of cakes such as hazelnut tart and Gianduiosa, not to mention chocolates, cream spreads and zabaglione and other products in jars.
