Tourists come from outside the region, even from abroad, to savour the gofri, a wafer typical of the upper Val Chisone and Val Susa. The simple dough is made with a mixture of water, flour, milk, eggs, salt and yeast, to which Marzia and Sergio add two special ingredients: love for their work and respect for the local area. This is evident from the ingredients they use: organic flours from Bruno Castagno’s mill in Giaveno, the lardo of Brarda in Cavour, the cheeses of the Perotti farm at Gran Puy near Pragelato, the seasonal vegetables, preserves and jams of the Arc en Ciel farm in Cafasse, and the plain chocolate of Caffarel in Luserna. Besides the famous takeaway wafer, it’s also possible to enjoy local dishes, one of the most popular of which is the supa barbetta, a soup typical of the Waldensian Valleys made with grissini, cabbage, cheese, butter and vegetable stock. The premises are trim and clean, and Marzia and Sergio create a family atmosphere that makes customers feel at home.
