This agricultural cooperative’s decision to supply ecologically responsible products was born of the idea to engage more directly in every stage in production. The members raise their animals by feeding them with respect for their natural growth rate and leaving them plenty of space to roam freely. Liriodendro came into being in 2001 with a small poultry abattoir, a butcher’s workshop and another for the production of cooked and raw charcuterie. The shop sells seasonal vegetables and organic cheeses, Piedmontese fassone veal, chickens raised for 120 days, the rabbits from the La Cerea farm and self-produced charcuterie: small cacciatorini salami, polyphosphate-free boiled ham, artisan wurst and prosciutto (Liriocrudo), aged for at least 18 months in the Parma hills, all made with pork from pigs raised on straw. The shop is open from Tuesday to Saturday from 9am to 7.30pm, but products are also available online and can be either picked up at affiliate shops or delivered to your home.
