San Paolo

Birrificio San Paolo, established in Turin in 2008 by Maurizio Griva and Graziano Migliasso, was one of the city’s first craft breweries. Since 2011, the production hub in Via Airasca has been flanked by a pub which is now an institution in the San Paolo quarter. Each beer is the fruit of a careful selection of malts, hops, yeasts and the use of water treated to achieve the most suitable characteristics for every style. The production range comprises high- and low-fermentation beers, among which the vibrant IPA Ipe, Cocoa, a stout, the honey-flavoured Robinia, the Belgian strong ale Hemlock, and Buxus, a helles bock. The brewpub serves homemade food: hamburger, sandwiches, focaccia, farinata, pasta dishes and, on a rotation basis, specialities such as pastrami and ribs. The place is run by Graziano, who places the emphasis on the quality of the ingredients, experimentation and the diffusion of the culture of craft beer, and it is now a pole of attraction for enthusiasts in Turin.
