San MicheleThe brewery occupies part of the evocative old Maglificio Bosio, an industrial complex that dates from the second half of the 19th century. A museum dedicated to the Turinese artist Mario Giansone was opened recently just metres away and the Sacra di San Michele, an abbey which is more than a thousand years old, looms in the background. The brewery opened in 2010 and the names of its beers are inspired by heroines of the opera, of which its founder is a buff. Butterfly is a blonde ale with slightly fruity flavours and a delicate bitter aftertaste, while for red ale lovers Carmen is a brew in which sweetness and bitterness find just the right balance. And don’t be frightened by Valchiria, a light-bodied, low-alcohol wheat beer which stands out for its fruity flavour. In general, production is placing the emphasis more and more on seasonality and freshness. Another important part of the experience, finally, is the restaurant, where the beers are an ingredient in a great many dishes.
