The story of Eupremio, aka Premio, and his son Antonio, born in 1983, is one of enlightened family entrepreneurship. The two generations of butchers now run their business together with a combination of tradition and contemporaneity at Turin’s Santa Rita market, founded in 1961. The father boasts great knowledge of products, while the son brings an air of novelty with innovations such as oven-ready dishes and creative preparations such as mini-meat canapés and pies, and pig-shaped hamburgers for kids. Their pièce de resistance, however, is hand-chopped veal, with Antonio competing every year in a sort of “Meat Olympics” as well as being an active member and founder of the Confraternity of Hand-chopped Veal.
