This brewery has its roots in the historic Idea 2 Pub in Collegno, opened in 1985. It began to produce craft beer in 2014 under Fabrizio Mungo, Alessandro Ravarino’s uncle, with a 300-litre production plant in a small space on the premises. Meanwhile, Alessandro had received his Brewmaster’s diploma at the ‘ITS in Turin. In 2020 the brewery moved to a 100-year-old warehouse, totally restructured, in Grugliasco. Today the plant has a capacity of 12 hectolitres and, with a number of collaborators, produces eight unfiltered, unpasteurised beers, inspired by the German and, to a lesser extent, British traditions, with great attention to sustainability and energy-saving. Not to be missed are the fresh, floral Pilsner Smemorata and Birra del Matto di Collegno, a fuller-bodied Doppelbock. The latter is used to produce a digestif, Amaro del Matto di Collegno, served with Birrucci, biscuits made with the residues of the cereals used to make the beers. All products may be enjoyed in the historic pub itself and in the pub next door to the brewery.
