If you walk among the old pergolas of erbaluce grapes of the Caretto cellar, you will realize how tradition and innovation can live together and produce great results. Small weather control units constantly signal the plants’ water requirements and keep track of the wind situation. The old pergolas flank new rows of vines, mainly of erbaluce grapes but also of barbera and nebbiolo for the production of a good Canavese Rosso and an excellent Nebbiolo. White wines deserving of mention are the two Erbaluces, one more classical, the other produced with selected grapes, a superlative Erbaluce Metodo Classico and a good Passito di Caluso. The Erbaluce is fresh and floral with a pleasant softness, that is especially evident in the selection. The cellar organizes tastings in the vineyard, where it is possible to observe not only the rows of erbaluce but also lovely fields of pignoletto rosso and bianco perla corn, both varieties on the Slow Food Ark of Taste list of endangered animal breeds, plant species and food products. In addition to the wines, the farm shop also sells corn meal and products made with the two varieties.
