In 2021 the Boetto butcher’s shop celebrated 90 years in the business. It is now run by brothers Fabrizio and Daniele Tarrocchione, who represent the fourth generation of the family. The pigs and cattle – the latter come directly from a farm Cuorgnè, a few kilometers away – are butchered at the shop’s own abattoir. The vast product range features prosciutto Gran Paradiso, which ages from 18-24 months and has received a mark of quality from the eponymous national park. In recent years the shop has set great store by trout farming: with their firm, non-fatty flesh, its smoked rainbow trout fillets are very versatile in the kitchen, where they can be used in a variety of ways – in tartares or to make pasta sauce, for example. The meats (all properly hung according to cut), trout and an impressive selection of Canavese gastronomic specialties (we recommend the agnolotti filled with roast meat) are on sale in the shop in the very center of Pont. You will be welcomed there by Sandra Boetto, Fabrizio and Daniele’s mother, and Sabrina Serena, Fabrizio’s wife, who will be happy to offer you advice on the best wine (from the local area but also further afield) to go with the food you buy. They also run an e-commerce service.
