Maybe not everyone knows that bees practice transhumance, meaning that they move from one area to another during the various flowering periods. At Apicoltura Canavesana it’s Deborah and Cesare who decide where to move the hives, deliberately choosing places away from roads and sources of pollution. The areas correlate with the honeys: the millefiori, acacia and chestnut are produced in Valchiusella, the chestnut, high-mountain millefiori and rhododendron in the Gran Paradiso National Park-Val Soana and Valle Orco (all three bear the Parco Gran Paradiso guaranteed quality trademark and the latter two are also Slow Food Presidia). The company also produces propolis, royal jelly and pollen, which is sold fresh or dried. You can find all these products, a small selection of Italian honeys from other producers, and cosmetics made with honey, beeswax and so on at the point of sale in the center of Ivrea (Thursday and Friday 3.30pm-7.30pm and Saturday 10am-12.30pm and 3pm-7.30om) and at the street markets listed on the website.
