In 2007 Aurelio Ceresa, an agronomist who inherited his name and his passion for nature from his grandfather, converted this farm to the production and processing of goat’s and cow’s milk. In the heart of the Gran Paradiso National Park in meadows at altitudes of 1,400 to 2,400 meters, goat and cattle graze free from June to September. The milk produced is processed and the cheeses are transferred to mature in crutin, grottoes hewn into the rock. The range includes mature flavorsome raw-milk toma, natural and aromatised, like the cow’s and goat’s milk blues, the soft Tuma dell’Oregge with its sharp mountain herb aroma, goat’s caciotta and Fontal. The fresh cheeses are produced at the Cascina Ollera farm in None with full milk from animals fed on self-produced grass. Its product range includes milk, the tasty fresh cow’s and goat’s Fioccolino, Fiocco di None, Robiola del Commenda, Delicata and ricotta, with its taste of fresh milk. All are on sale directly on the premises and appear on the menu at the agriturismo restaurant run by Aurelio’s sister Elena.
