The Ballari bakery in Valle Sauglio has been active since 1967. Working there today are Margherita, Renato and Matteo, grandson of the founders an enthusiastic and knowledgeable custodian of the art of bread-baking, a passion he has inherited from his family.
You are welcomed at the entrance by bread loaves and an inebriating aroma. Durum wheat, cereals, buckwheat – all breads are proved slowly using biga, a dough of flour, water and yeast. The counter always spills over with breakfast items: croissants, pangoccioli (chocolate chip buns), pain suisse, biscuits with or without sugar, cornmeal biscuits, jam tarts, apple pies, pastries, and sweet focaccia (similar to that of Chieri).
The true speciality, which attracts customers. from far and wide, is the handmade robatà grissini, are sold loose or packaged. The 20 or so typologies produced include: classic, with olive oil, wholemeal, walnut and gorgonzola, onion, buckwheat and sesame seeds, curcuma, chia- and flaxseed, Caudini, with bagna caoda and Cioccolatosi, with chocolate. Savoury items not to be missed are the pizza slices, crackers and appetizers.
