This beer cooperative, established in 2014, is run by a group of partners among whom executive and sales manager Stefano Montanaro, Aldo Scioscia, who manages Il Birrificio pub in the centre of Avigliana, and Dario Scarcina, the brewer. The philosophy of the venture, which has organic and vegan-friendly certification, is to reduce impact on the environment and some of its beers are gluten-free. Beers are available in casks and bottled, and the range comprises Edvige (pale, lightly spicy and citrusy), Tyto (pale, floral and delicate), Alba (pale, gluten-free, sweet and light), Barny (pale, floral and slightly bitter), Uffa (pale and organic, aromatised with lime honey), Otus (amber, caramelly and dry), Speziale (amber, aromatic and sweet), Siberian (amber and full-bodied with apricot jam) and M97 (dark, soft and pervasive). The brewery also produces seasonal and cask-conditioned beers. The shop is open from Monday to Friday, from 8.30am to 12.30pm and from 2.30pm to 6.30pm. The pub is open from Monday to Thursday and on Sunday from 7pm to 2am and on Friday and Saturday from 7pm to 3am.
