If we had to name a farm that represents the philosophy of the complete production cycle, we would say Cascina dell’Allaas: hence corn cultivation, livestock farming – dairy and Piedmontese cattle, sheep and pigs, all fed on self-produced corn and cereals – a sausage and salami factory, a dairy, a butcher’s shop, an ice cream parlour, a delicatessen and, last but not least, a self-styled agriristoro, a restaurant serving farm produce at lunch and dinner, with the emphasis on mixed grills and charcuterie and cheese platters. At the farm shop it is possible to buy fresh meat, charcuterie (including boiled salami, mocetta, cured chamois meat, and salampatata, potato salami), cheeses, among which exceptional tomini (fresh, mature, preserved in oil, with vinegar, with spices and with preserves), toma cheeses (some flavoured with rosemary or chili), pasteurized fresh milk, yogurt and an array of local specialities (vitello tonnato, Russian salad, toma fondue, meat and sausage pasta sauces, and chestnuts, plus beef sushi with salsa verde, parsley and garlic sauce, bagna caoda, anchovy and garlic dip, and other traditional Piedmontese condiments. The shop is open from Monday afternoon (12 noon-8pm) to Saturday (9am-8pm).
