This historic producers’ cellar is situated in the center of Caluso, near the town’s agrarian school. If you have time, ask to visit the vinification cellars with their large steel vats and aging barrels. The cellar sells its wine both unbottled, bottled and “bag in box,” a system popular with customers. A new wine aging facility is being built alongside the old one with a reception area for the public. Top wines are Erbaluce Classico Fiordighiaccio, produced with cryomaceration, Punto 75, aged on ambient yeasts for a year to acquire mineral and vanilla aromas, a good Passito (the 2017 and 2007 vintages are on sale), a couple of excellent spumantes produced with the metodo classico (Goccia d’oro, Rosè) and one, the more easy-drinking Cuvée Soleil, produced with the Charmat method. The cellar also produces an interesting young Rosso Canavese from nebbiolo grapes, and a Carema from grapes grown in the village of the same name on the border with the d’Aosta. The cellar supplies Compagnia dei Caraibi, also a Master of Taste, with the Erbaluce wine for its Vermut Carlo Alberto.
