I Balmetti, at Borgofranco di Ivrea, form a lovely village of 260 natural cellars cooled to a constant temperature by a natural ventilation system. In a wonderful Beer Garden – open at night from Monday to Saturday and at lunchtime on Sundays – Marco serves individual and groups snacks that include delicious sandwiches miasse, fine flatbreads typical of the Canavese district, made with cornmeal from the Mulino di Piova mill (Master of Taste), and cooked on red-hot griddles in a wood oven. The oven is coupled to a characteristic van with which Marco takes his quality street food to local fairs and fetes.
Tasty fillings include splendid Borgofranco veal sausage, local toma cheese, salignun (a delicious spicy ricotta), salampatata (potato salami) and salami di turgia, a beef-pork salami typical of the area.
The food is served with cool Bavarian-style beers.
