In this lovely modern butcher’s shop on Via Cibrario, Giovanni and Emiliana sell fine cuts of Piedmontese beef and veal, guaranteed by the Coalvi protection consortium, together with Sambucano lamb, Villanova blonde chicken, and Carmagnola grey rabbit. Cru, hand-chopped veal, is a real specialty, unforgettable. Thanks to the initiative of the couple’s children Francesca and Alessandro, in recent years the shop has produced a meat and Acquerello rice sushi with crushed hazelnuts, pistachio nuts, taggiasca olives, Tropea red onions, and seirass (spicy ricotta). Not to be missed are Emily, with burrata, lemon zest and licorice, Cesca with sun-dried tomatoes and taggiasca olives, and Sandrin, with arugula and parmesan. Other specialties are Giampaolones (hamburgers with Sicilian pecorino cheese, Gianduia (meat, cugnà, or grape must, cheese and oil), Gioanin, hand-chopped veal with mustard, shallot, capers and quail’s eggs. The very latest addition to the range is poke, which can be personalized with venere or basmati rice or quinoa, edamame, vegetables, and chicken or veal.
