When the Coalvi Protection Consortium began certifying Piedmontese-breed meat in1984, Giovanni and Emiliana’s butcher’s shop was one of the first to believe in the product’s potential. Their desire to raise the profile of this lean, tasty meat and the entry of their son and daughter Alessandro and Francesca into the business gave life to Crȕ, a meat sushi combined with the famous Acquerello rice and other prime-quality ingredients such as crushed hazelnuts, taggiasca olives, pistachio nuts, Tropea red onion, seirass (spicy ricotta) and more besides. In addition to cuts of Piedmontese veals, the shop also offers a vast assortment of meats, including Villano blonde chicken, Sambucano lamb and Carmagnola grey rabbit, plus interesting specialties such as hand-chopped raw veal, available in individual portions, Giampaolone (a Piedmontese veal hamburger with Sicilian pecorino cheese), Gianduia (veal with cugnà, or grape must, toma cheese and oil), and Gioanin, hand-chopped veal with mustard, shallot, capers and quail’s eggs. Opening hours: from Tuesday to Friday from 8.30am to 1pm and 4pm to 7.30pm. Saturday 8.30am-6pm. A home delivery service is available by telephone reservation a day in advance, as is a catering service.
