A young craft pasta workshop which came into being in 2023 from an idea of Silvia Bertolina with the aim of providing a showcase for fresh pasta handmade with select ingredients and a short supply chain of small local producers. Production concentrates above all on stuffed pastas made with type-2 flour and fillings that follow the seasons. The organic vegetables are supplied by the Agrimani farm (a Master of Taste), veal by Coalvi, and pork by Luiset, while vegetarian and vegan pastas filled with soy ricotta and vegetable cheeses are also available. The most popular fillings are braised fassona veal with potatoes, carrots and onions, creamed baccalà, or salt cod, and the mixture of wild herbs and courgettes. The pasta is sold frozen to preserve its quality, but it may be cooked and consumed directly at one of the view tables on the premises, or ordered to take away. Guscio is an example of contemporary craftsmanship attentive to quality, sustainability and the land.
