This business is run by Katya Cortese, daughter of Flaminia, who taught and handed down to her a passion for cakes and confectionery. Canestrelli are made in many villages in the Susa Valley: here in Condove, Katya and her husband Paolo Gaido produce their own version, the fruit of research into historical traditions. These handmade biscuit biscuits are cooked on two griddles over an open fire and aromatized with lemon zest as set out in the production protocol. This version, known as Canestrelli di Vaje, has now been recognized as a “typical pastry of the Susa Valley” and included in the Province of Turin Basket of Typical Products. The biscuit also comes in variants flavored with cacao, hazelnut and orange. Select local producers supply Katya with various other specialties, honey, and heirloom Piedmtontese cornmeal, which she uses to bake paste di meliga, typical cornmeal biscuits. Also available are frollini, shortcrust pastries flavored with lavender, genepy, cinnamon and ginger, and hazelnut tarts. Katya and Paolo are often to be found at fairs and street markets selling freshly baked canestrelli. Last but not least, we recommend a new addition to their range: protein bars with different mixtures of cereals.
