The farm covers an area of 50 hectares at altitudes that range from 600 to 900 meters in the Montebasso district overlooking the town of Lanzo Torinese. Here Marco Brachet Contol, a graduate in forestry and environmental sciences, raises about 50 Chamois Coloured goats. From April to November, the animals go out to graze, while Marco himself oversees haymaking for the winter feed. His philosophy to reclaim and respect the mountain environment gives life to a variety of cheeses, all on sale at the shop in Via Matteotti in Lanzo. The fresh cheeses comprise ricotta, tomino and robiola, while the medium-mature white-rind line features muffettato and raw-milk robiola. For lovers of stronger flavors, there are cheeses that mature for 20 days to five months and more. Smaller toma cheeses are also available that mature for shorter periods. Longer maturation periods also produce a cheese for grating, on sale exclusively in the winter months.
