Established by her uncle in 1957 and taken over by her mother Rosa in 1961, since 1972 this shop has been run by Rosa Patriti and her husband Aldo Raviola. Situated in the heart of the San Salvario neighborhood, a stone’s throw from the Piazza Madama Cristina market, it is a pole of attraction for dairy lovers. Laura and Aldo’s preference goes to the finest Piedmontese produce such as the tome from the Val Chiusella produced by Matteo Villa, the buffalo mozzarellas of the Chicco dairy in Carmagnola, fresh goat’s cheeses from Chialamberto, Gorgonzola from the province of Novara, and the Robiolas of Roccaverano, Murazzano and Murianengo. The range also features excellent pecorinos from the province of Grosseto and a number of cheeses from the South of Italy, such as fiordilatte, or cow’s milk mozzarella, from Puglia and zizzona, a gigantic buffalo mozzarella from Battipaglia. The shop also stocks sauces and honeys to go with the cheeses, as well as charcuterie, and fresh pasta produced in Santo Stefano Belbo. In the autumn period, the shop sells Alba and Monferrato white truffles carefully selected by Aldo himself, so be sure to follow’s expert advice if you care to buy one.
