The Testa butcher’s shop has more than a hundred years of history behind it, and the quality of its meat is very high indeed. Paolo’s exclusive supplier is a livestock farm in Canale (Cuneo) run by Luigi Rabino, of whom he is a partner. The cattle are raised in the open and live exclusively on natural feed. Another farm, Cascina Cerea in Pralormo, supplies the chickens and rabbits. In addition to traditional cuts, the shop also offers an all-year-round selection of tasty delicacies such as stupendous meat in aspic (in summer), meat sushi, raw sausage and wonderful hand-chopped veal. High-quality deli dishes include carpione, marinated eggs, zucchini and veal cutlets, vitello tonnato, chicken salad, Russian salad, a vast range of fine cheeses, and splendid desserts such as cheesecake, zabaglione, panna cotta and crème caramel. Everything is homemade in the kitchen.
