Historically speaking, olive growing in Piedmont goes back to the Roman era. Encouraged by the favorable climatic conditions, in the late 1990s the Chialva family decided to plant a few trees for ornamental purposes but the success of this first experiment gave them the idea of going into oil production. They went on to plant about 600 olive trees on their property in the Besucco district, in the lovely Pinerolo hills. Since then, brothers Matteo and Alberto and their mother Giusy have planted 11 different cultivars in varying proportions. Thanks to their in-house oil press, they are able to control the entire production chain, from the olive harvest to crushing to packaging. The extra virgin oil produced is named Besuc for the hill where the olives grow. Manual harvesting and cold pressing in the same day followed by oxygen-free storage ensure a high level of quality to a product characterized by low acidity and pleasant flavor. Besuc is a rarity on sale solely at the farm or on the internet, while local restaurateurs are proud to serve it in their restaurants.
