The first mill in the Susa Valley to return to 100% productivity is to be found in Bruzolo, on the town’s old “mill road”. Here the watchword is traceability: the whole supply chain is given over to ingredients sowed, cultivated and processed in the valley with special care devoted to repopulating the land with heritage grain varieties, mountain rye and traditional corns, and the same applies to the promotion of the local chestnut, which has a central role in the production process. The mill shop stocks the whole range of products, the flours – chestnut and sweet chestnut, buckwheat, heritage soft wheat, black rice, rye and a blend of cornmeal and buckwheat – in one-, two- and five-kilo bags.

Also on sale the range of processed products: shortcrust biscuits, cornmeal biscuits, canestrelli, torcetti, rustic water biscuits, chestnut cookies, mini rusks, grissini, focaccia di Susa and wholemeal rye Alpine bread. The range is enhanced by dried chestnuts, Italian borlotti beans and crushed Italian soya beans.
