Oscar Roffino’s small organic farm has been active at Albiano and Palazzo Canavese for some years now. The radical decision to cultivate produce without the use of pesticides, which would jeopardize their wholesomeness, has made the place a feather in the local area’s cap. It produces interesting organic corn, wheat, wholemeal and classic flours, as well as sauces and condiments such as tomato passata, pumpkin preserve, nettle and cavolo nero pesto and miscellaneous vegetables in sweet and sour sauce and preserved in oil. A number of compotes are enhanced with flowers: hence flavors such as apple and elderflower, acacia, hibiscus and mimosa. Roffino also collaborates with another two Masters of Taste: the Castello di Caravino pasta workshop, which it supplies with vegetables, and the Demartini Mauro Ivan breadshop in Salassa, which makes use of the farm’s organic corn. A shop was opened recently at the Ricetto di Candelo, where it is possible to buy the farm’s products.
