The brewery was established by two friends and beer buffs, Guglielmo and Sergio, in 2008, and Maurizio Musi, the brains behind the present range, took over the reins in 2013. Musi acquired his knowledge of beer attending courses at Cerb in Perugia and the most important brewers’ associations such as Unionbirrai, specialising also as a beer taster. His creations are characterised by slow maturation in steel vats without fermentation, hence great naturalness. The labels draw inspiration from the legend of the Round Table and are named after its various characters. The product range comprises a number of different styles, both low- and high-fermentation. Elaine, an American Pale Ale is characterised by aromatic hops with tropical fragrances, while Gawain is a craft winter red ale flavoured with chestnuts and chestnut honey. The brewery’s recipes are evolving all the time, in some cases to meet the demands of customers at the pub next door. New beers are now being developed, some of them gluten-free. Graal, for example, is a festive beer which, this year, following the Belgian Trappist style, is pale, structured and full-bodied. Shop open from Monday to Friday 2.30pm-7pm, and on Saturday 5pm-7pm.
