This farm, the Azienda Agricola Scaglia, established in Rivoli in 1931 by the great grandfather of the present owners, Paolo, Graziano and Mauro Scaglia, was one of the first to receive PGI recognition for its Piedmontese young beef. In 1993 the farm opened its shop, complete with workshops where its Piedmontese veal and beef, pigs, chickens and rabbits are butchered, processed and sold. Here they also grow corn, barley, wheat and grass to feed the animals, which are reared in spaces adequate to their needs in terms of size and hygiene; there is also a meadow where they can graze all year long. 80% energy self-sufficient, Scaglia was one of the first farms to receive animal welfare certification. It is no coincidence that the meat counter is packed with specialties. They have now introduced a “ready-to-cook” line of products (with breading that is gluten-free, like everything else served in the shop) and installed an aging chamber fitted with a pH regulator and a specific micro climate, which makes it possible to sell ribs of beef after 40-60 days of hanging.
