After working for a few years with his mother, Carla Razzetti, and his sister Enrica at the family’s butcher’s shops in Chieri and Gassino, in 2017 Mauro Schiavo opened a new shop in San Mauro Torinese to produce Gambaglione salami, a recipe handed down by his grandfather. Given its strategic position, the San Mauro Torinese point of sale was extended to include a restaurant, open in the evening, and soon became the business’s main premises under the Tasta brand (surprisingly enough, in Piedmontese dialect “tasta” means “to taste”). The shop focuses on Piedmontese fassone and vacuum-packed ready meals, among which the specialities are bollito misto (mixed boiled meats), tastaburger, slow-cooked vitello tonnato and exquisite shin of pork in beer. The white meats come from the area around Barge in the province of Cuneo (Cn) and , in addition to the aforementioned salami, the Schiavo have increased their production of other cured meats, such as coppa, lardo and pancetta, some other aromatised with Bugin, a Piedmontese gin made by a local distillery to its own recipe with local herbs. On the shelves you’ll also find Tasta’s own preserves and sauces, spirits, coffees and craft beers. Closed on Sunday and Monday. All products are available on their website www.tastafood.it .
