Mauro Schiavo, heir to a family of butchers, opened this shop in 2017. It is situated on the boundary between San Mauro and Castiglione Torinese by the road that runs at the foot of the Turin hills (and it has a convenient carpark). In addition to classic cuts of Piedmontese fassone veal, Mauro, who boasts experience as a barman, also specialises in charcuterie aromatised with gin. Not just any old gin, but Bugin, produced in collaboration with the Distilleria Quaglia in Castelnuovo Don Bosco. The herbs are picked by hand in the Piedmontese Alps or cultivated in the Turin hills. The special mix of juniper, mugwort, tansy, wormwood, thyme, yarrow and other herbs that remain secret give the gin a distinctive aroma and make it perfect for curing meat before and after salting. It can also be used to marinate meat and for simmering and basting roasts and steaks. Tasta organizes cookery courses and tasting evening in collaboration with other Masters of Taste, and the shop also sells an impressive selection of sauces, juices, beers, natural wines and spirits. Closed on Sunday and Monday morning.
